Now the key here is quality, so top drawer ingredients only…spend a few extra quid on your steak and balsamic in particular. Take your steak out of the fridge and allow to come to room temp - about 30 to 40 minutes.  Season with salt and pepper and then cook the steak to your liking.  I like mine medium rare and to finish off with a knob of butter in the pan for the last minute.  Make sure to rest the steak for 10 minutes.  Once rested, spread the rocket out onto a board.  Slice the steak as thinly as possible and spread over the rocket.  Throw on the tomatoes and sprinkle the parmesan.  Squeeze over the lemon juice and then pour a generous helping of balsamic over the lot!
