Preheat the oven/air fryer at 380F.[/highlight] [highlight=transparent]2. In a food processor, place all ingredients in the protein section. Blend it until you get a smooth paste. [/highlight] [highlight=transparent]Adjust the seasonings according to w/taste.[/highlight] [highlight=transparent]3. Roll the mix into a ball, about 2.3 inches in size. [/highlight] [color=rgb(152, 0, 0)][highlight=transparent][Tip: Use an ice-cream scoop to perfectly do the [/highlight][/color][color=rgb(152, 0, 0)]Croquettes[/color][color=rgb(152, 0, 0)][highlight=transparent]][/highlight][/color] [highlight=transparent]4. Place the balls in the air fryer basket, and spray with olive oil. Leave a little space between each ball so they aren’t touching each other. Cook for 20-25 min, or until golden and crispy (check after 10min).[/highlight] [highlight=transparent]5. Heat the olive oil on a large skillet over medium heat, add the onion, the garlic, and saute for 3-5min, until the onion is soft.[/highlight] [highlight=transparent]6. Add the rest of the ingredients in the tomato sauce section and cook on low heat for 15 min. Cook uncovered, stirring occasionally until reduce the sauce by almost half. [/highlight] [highlight=transparent]7. In a pan bring water to a boil. Add the orzo, and let it cook for 7 min until it is tender but still firm to the bite. Heat the olive oil in a large skillet on medium heat. Add the garlic and saute for the 30s, or until the garlic begins to brown.[/highlight][/color] [color=rgb(28, 28, 28)][highlight=transparent]9. Add the spinach to the pan, toss well and cook for 1 min. Add a little bit more olive oil, toss and cook for an additional min. [/highlight][/color] [highlight=transparent]10. Add the sweet peppers, and toss well. Cook for 1-2 min.[/highlight] [highlight=transparent]11. Add the cooked orzo, the cucumber, and all the seasonings and toss to combine.[/highlight] [highlight=transparent]Adjust the seasonings according to taste. [/highlight] [highlight=transparent]12. Remove from the heat. Top the orzo salad w/ crumbled feta cheese. Sprinkle the dish w/ dry oregano herbs, and fresh parsley. [/highlight]
